PureFlow™ is a specialised technique developed by Watson & Son to gently transform raw Mānuka honey into the smooth, creamy texture the brand is known for. Rather than rushing the process, it’s all about time, care, and craftsmanship.
How It Starts: Creating the Seed Honey
Every PureFlow™ batch begins with something called seed honey.
Watson & Son carefully select a small batch of naturally crystallised raw Mānuka honey. This honey already contains fine crystals that form naturally over time. Instead of melting them away, the team works with them.
The honey is gently hand-folded and brushed, gradually refining the crystals until they form a smooth, velvety paste. This paste becomes the seed honey, which is the starting point for the PureFlow™ process.
Creating the perfect seed honey takes patience and skill, and it can take up to 10 days to get it just right.
Natural Evolution: Letting the Honey Develop
Once the seed honey is ready, it’s slowly folded through larger batches of Mānuka honey.
This stage is all about working with the honey, not against it.
The honey is carefully turned and blended over time, allowing the fine crystals from the seed honey to spread evenly throughout the batch. This controlled process helps guide the honey into developing its signature smooth, creamy consistency.

Before any jar of Watson & Son honey leaves the facility, it goes through a final round of quality checks.

If the honey hasn’t quite reached the PureFlow™ standard yet, it simply continues through the process until it does.
